It’s been a minute! Between the new baby, recovering from a c-section, having my daughter’s 4th birthday and hosting family at our house all in one month, it’s been chaotic! I am so relieved that things have somewhat calmed down and I found some time to share another recipe!
I’ll be honest. My pancake skills are lacking. Usually when I make pancakes, they are never perfectly golden-brown or circular. Whenever I try to use a box mix for whatever reason, they just look lopsided and disappointing. But these ones actually turned out amazing, so I needed to share this recipe I came up with. They are also healthy! They are subtly sweetened with honey. Make them even healthier by topping with fruit and peanut butter or almond butter instead of syrup!
Ingredients:
- ¾ cup wheat flour
- ¼ cup oat flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup almond milk
- 1 egg
- 3 tsp honey
- 2 tbsp olive oil
- ¾ tsp vanilla
- ½ tsp cinnamon
Directions:
Combine and mix wet ingredients. Add in dry ingredients and mix well. Use medium-low heat. Melt thin layer of butter or oil of your choice. Pour batter on the pan and fry for 1 to 2 minutes on each side or until golden-brown. Serve with butter and syrup -or- a healthier way with your choice of nut butter and fruit. Enjoy!

Can you use almond or coconut flour instead of wheat flour? These sound amazing!

I’m sure you can! I’m sure almond flour is fine. Sometimes I have had trouble when I try to sub coconut flour in recipes but maybe it would work for this! Try it out and see! 🙂
